Shrimp and cheese muffins

New recipe! Make sure to try these delicious shrimp and cheese muffins for a filling, high in protein, savoury snack.

You will need:

  • Eggs

  • Shrimp

  • Tomatoes

  • Bell pepper

  • Low fat cheese

  • Olive oil

  • Green leaf lettuce

Preparation:

  1. Beat the eggs, add the shrimps (thawed or fresh), the sliced tomato, pepper and grated cheese. You can add spices of your choice, except salt.

  2. Grease the muffin tins with olive oil, fill with the mixture

  3. Place in the oven at 180 degrees for about 8 minutes

  4. Serve with a cup of fresh leaf salad of your choice

Tip: if you do not have a muffin tray, you can bake it on a pan like a regular omelet.
